Mini Fire Roasted Italian Cod Broilers

Mini Fire Roasted Italian Cod Broilers

To appeal to the growing dining population of Millennials, innovation on sharable appetizers is a constant focus. This recipe takes a classic ‘Cod au Gratin’ and a refreshes it for a new generation to share and enjoy. To save time for the back of the house while also injecting bold Italian flavours, I used our Fire Roasters™ Rustic Italian Cod from frozen and sliced thinly. In order to increase speed of service this recipe can be easily prepped ahead.

  • Serves: 2-3
  • Meal type: Appetizers

Method

  1. Prepare culinary cream to thick consistency – 150 g to 3 cups water.
  2. Boil potatoes until tender then slice thinly.
  3. Using cleaver or large chef knife, slice from frozen Fire Roasted Italian Cod into ¼inch thick pieces.
  4. Assemble the broilers by spooning in an ounce of cream into the bottom of each small baking dish then layer in potato until half full. Top with one more ounce of cream and sprinkle shredded parmesan cheese.
  5. Top with 3 to 4 slices of Fire Roasted Italian Cod, one last dollop of cream and small sprinkle of chopped parsley.
