  • 946 ml vegetable oil (for frying)
  • 473 ml all-purpose flour
  • 10 ml baking powder
  • 5 ml baking soda
  • 5 ml kosher salt
  • 2.5 ml fresh ground black pepper
  • 15 ml fresh ginger
  • 355 ml ginger ale
  • 237 ml cranberry juice
  • 15 ml apple cider vinegar
  • 118 ml dried, chopped cranberries
  • 237 ml all-purpose flour
  • 6 (118 ml) Pacific Cod Loins (product #1023394)


  1. Heat deep fryer or large pot filled with vegetable oil (fill to 7.62 cm in the pot) until oil registers 375°F.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt and pepper.
  3. Whisking constantly, slowly add ginger ale, cranberry juice and apple cider vinegar (add more ginger ale until it is the consistency of pancake batter). Stir in chopped dried cranberries.
  4. Place flour in a shallow bowl. Season the fish with salt and pepper.
  5. Dredge the fish in the flour, shaking off the excess, then dip in the batter, letting excess batter drip back into the bowl. Work in batches, ensuring the oil returns to 190.6°C between batches.
  6. Fry fish until golden brown and crisp, about 2 minutes per side.
  7. Transfer to a paper towel-lined baking sheet. Plate and serve.
