Ingredients

  • 24 x 120 g High Liner Foodservice Signature Haddock Loins SVP #6586, thawed
  • 450 g High Liner Foodservice Signature IQF Sea Scallops 20-30 ct, thawed
  • 450 g Mirabel Pacific White, raw P&D Tail off Shrimp, 41-50 ct, thawed
  • 125 mL vegetable oil
  • 6 medium cooking onions, diced
  • 4 green peppers, diced
  • 8 garlic cloves, crushed
  • 30 mL oregano, dried
  • 3.0 L crushed tomatoes
  • 1 litre clam juice or fish stock
  • 500 mL dry white wine
  • 125 mL fresh basil, minced
  • 10 mL cayenne pepper

Method

  1. Cut Haddock into bite-sized chunks.
  2. Place Haddock, Sea Scallops and Shrimp in a large bowl. Cover and refrigerate.
  3. Heat oil in large stockpot. Sauté onions, peppers and garlic in heated oil until tender, about 10 minutes.
  4. Add oregano, tomatoes, clam juice or fish stock and wine.
  5. Bring to a boil, reduce heat and simmer 30-40 minutes until slightly thickened and reduced.
  6. Add seafood, basil and cayenne. Bring to a boil, reduce heat and simmer 5-10 minutes until seafood is cooked.
  7. Season to taste if desired.
  8. Serve over cooked rice or pasta.
  9. Garnish with sliced green onions or chopped parsley.
