Almond Crusted Sole Bites with Wasabi Tartar

Almond Crusted Sole Bites with Wasabi Tartar

Upper Crust™ Almond Crusted Sole with Lemon and Chives! This recipe is designed to be used as a center of the plate option in the entrée section of the menu. However, with a few simple steps we can transform it into a sharable appetizer. Using one product in various spots on the menu is key to reducing inventory, reducing waste, and helping your kitchen staff become more efficient and effective. Typically we would bake the almond crusted sole from frozen for about 12 minutes, which is fine for an entrée but for an appetizer we need to reduce the cooking time by at least half. By simply deep frying almond crusted sole from frozen we reduce the cooking time to about 5 minutes. The almond crust gets an even golden brown appearance and a fantastic crispy texture. Then we simply slice the sole, top with wasabi tartar and place into serving spoons
